Miami University senior Melanie Krook of Bernardsville, N.J., received the American Chemical Society Undergraduate Research Award sponsored by the Agricultural and Food Chemistry Division.
Krook was selected based on her presentation at the August national meeting of the American Chemical Society held in Boston. She competed with undergraduate students from other institutions and was awarded a cash prize from the society for her presentation.
A double major in biochemistry and French, she has performed undergraduate research for over two years with Ann Hagerman, chemistry and biochemistry professor at Miami. She also received support for her research from Miami University’s Undergraduate Summer Scholar’s program and the College of Arts and Science Dean’s Scholar program.
Krook’s award-winning work was a study of the stability of polyphenols, a chemical compound believed to contribute to human health, under mammalian digestive conditions. Krook plans to conclude her research during this academic year by exploring how food stabilizes some compounds against degradation. Her work will be submitted for publication in the Journal of Agricultural and Food Chemistry.
Her first project, involving extraction of polyphenols from natural soils, has been accepted for publication in the peer-reviewed journal Communications in Soil Science and Plant Analysis.
